My dad’s Aunt Frances was one hell of a woman. She lived to be 94, and had quite the life. She was good at chocolate cake, I mean REALLY good at it. But also:
Frances Emily Nesbitt Walker was born in a small town in Nebraska in 1913. Her family moved to Cheyenne, and she graduated from High School at 15. At 16, she attended Denver University, and got her degree in…something or other. She went back to work at Asher Wyoming in Cheyenne, and met my Dad’s Uncle Pic (W. Dillard Walker), whom she was married to from 1938 until he passed in 1993. During that time, Great-Uncle Pic ran a flight school, and Aunt Frances became the first female in Wyoming to learn to fly (!!!) (and they ran 3 different Pilot Training Academies during WWII, for the Army Air Corps).
After the war, she and Pic moved to Saratoga, Wyoming, and operated a sheep and cattle ranch there, whilst also developing The Saratoga Inn. In 1959, they moved to Scottsdale, Arizona, where Frances was the first employee to be hired at Arcadia High School – spending the next 20 years as the Secretary to several Principals. She and Pic had hundreds of friends and traveled extensively. She was – among all the other things – a founding member of the Sun Devil Club at ASU – where I will proudly have a membership when athletics resume.
What I remember of Aunt Frances was that, even until the end, she was such a wonderful woman, and a bright ray of light upon this earth. This is one of her many recipes, chocolate cake with cream cheese frosting that can be vanilla or chocolate (or probably anything you want it to be).
I hope you enjoy this cake as much as I did when I was a kid. I plan to carry this cake with me to the forever.

Aunt Frances’ Chocolate Cake
Substitute for Baking Squares
- 4 1/2 Tbsp Cocoa Powder
- 1 Tbsp Butter
- Heat oven to 350ºF
- Melt together chocolate squares and butter (I use the microwave)
- Beat Egg well…
- Then gradually add sugar and vanilla…
- Add chocolate mixture…
- Add sifted flour mixture (flour & baking soda) alternately with…
- Add Milk
- Bake about 40 minutes, check with toothpick
