If you are subscribed to my newsletter, you know that my dear friend Teri lost everything she owns in a house fire (including the house). Thankfully her, her mom, and her animals were able to get out before their house burned quickly to the ground. I asked her a months ago if she wanted to contribute to my Reader Submitted section, and she happily and generously sent me her recipe for Chicken & Dumplings Marsala – the recipe she gets the most requests for.
As luck would have it, life happened and I kind of paused this blog and did some more cancer treatments. Then her house caught fire, and it felt like it was time to put her recipe up…only I didn’t. Until today.
So, let’s talk about what it’s like to lose everything you own. I have no experience with house fires (outside my 4 years as a firefighter), but I am completely aware of how it feels to lose everything, because I have lost everything a few times in my life.
It feels heavy, and empty, and utterly devastating. To suddenly, without warning, have only the clothes on your back and the coat you grabbed on the way out brings a sense of tremendous loss, a heavy black pudding to wade through to try to figure out how to stop the destruction as it’s happening. Imagine standing in your street, in stocking feet, shoulders slouched, jacket in hand, as you watch everything you own burn to the ground. Feel the weight of that for a second.
Then feel the hope as you realize that you do have a community of people who care a great deal for you. Light in the distance as you try to breathe, and notice there are friends and relatives willing to hold your hand and hold you up around the world.
Well, I didn’t have much to give to help Teri and her mom, but I do have a platform to tell their story and to help them raise the money they need to get started again. Make no mistake, no amount of money can replace what they lost, but we can all come together to rebuild their world within ours.

Chicken & Dumplings Marsala
For Chicken Marsala
- 1 lb chicken breast
- 1/2 cup diced green onions
- 1 lb fresh white mushrooms sliced
- 2 tbsp fresh diced garlic
- 1 stick of butter
- 1 tbsp extra-virgin olive oil
- 2 cups chicken stock
- 1/2 cup Marsala wine
- 1 tsp crushed rosemary
- Salt & pepper to taste
For the Dumplings
- 2 cups self-rising flour
- 1 cup water
- 2 tbsp salted butter
- Preheat oven to 375°F
- Begin by mixing dumplings mix in a bowl and cover, setting to the side.
- Cube the chicken breasts and wash, melt butter over medium low heat with evoo, garlic and rosemary.
- Add cubed chicken breasts and green onions to pan, add half of chicken stock and cover, let simmer 5 minutes.
- Remove lid and stir adding the wine and remaining stock and mushrooms.
- Cover and simmer until mushrooms and green onions have cooked down stirring occasionally.
- Pour into a 13 x 9 casserole dish. Drop dumpling mix by spoonful over the Marsala and cover as much as possible.
- Bake for 15 minutes at 375° until golden brown, serve
